Tarta de naranja y dulce de leche, viaje al reino de las hadas del bosque

ORANGE AND DULCE DE LECHE CAKE, A TRIP TO THE FOREST FAIRIES KINGDOM

No os podéis imaginar las ganas que tenía de hacer esta tarta. Últimamente no estoy nada más que viendo mis retos más personales cumplidos y es sensacional. Y es que desde que me regalaron el libro de "Animation in Sugar", de Carlos Lischetti, hace dos años, siempre he querido hacer este hada del bosque. Me encanta como trabaja, su estilo tan sencillo y limpio. A ver si se me pega algo, ¿no?





La tarta en sí ha sido otro gran descubrimiento. No estaba muy segura de cómo quedaría la combinación de sabores naranja-dulce de leche pero después de probarla, os puedo confirmar que queda ¡¡genial!!

La receta la saqué de otro de mis libros que no había estrenado aún: "Lomelino's Cakes", de Linda Lomelino. Me encantan sus fotos y de sus recetas creo que sólo he hecho una, que está muy buena, por cierto (Cheesecake no-bake de frambuesas y frutos del bosque). Porque hice unas galletas que me salieron un churro. Así que, no estaba muy convencida de cómo me iba a salir. Pero ha sido todo un éxito.






Pocos bizcochos probaréis tan suaves como éste. Una maravilla que tenéis que hacer sí o sí. Aviso: No es un bizcocho sencillo, pero si seguís todos los pasos os quedará estupendo. Así que, ¿quién quiere un reto para este nuevo año?


TARTA DE NARANJA Y DULCE DE LECHE

Ingredientes:

Para el bizcocho:
5 huevos M a temperatura ambiente
100 gr. de harina
1 1/2 cucharadita de maicena
65 gr. + 35 gr. de azúcar
1 1/2 cucharadita de levadura
Una pizca de sal
4 cucharadas de aceite de girasol (canola u otra aceite que no aporte sabor)
4 cucharadas de zumo de naranja recién exprimido
1 cucharada de ralladura de naranja
1 cucharadita de pasta de vainilla (la mía Home Chef)

Para el almíbar:
175 ml. de agua
80 gr. de azúcar
1/2 cucharadita de pasta de vainilla

Para el relleno:
200 gr. de mantequilla sin sal a temperatura ambiente
150 gr. de azúcar glas
3 cucharadas de dulce de leche
150 gr. de queso en crema tipo Philadelphia

Para el ganache:
175 gr. de chocolate fondant
125 ml. de nata para montar +35% M.G.
30 ml. leche entera
1 1/2 cucharada de sirope de maíz (KARO)
75 gr. de mantequilla a temperatura ambiente

Para la cobertura con forma de tronco:
180 gr. de chocolate con leche fondant

Topper:

Preparación:

Del bizcocho:
  • Separamos las claras de las yemas en dos boles diferentes. (Sólo utilizaremos 4 yemas por lo tanto, con la que nos queda, podemos utilizarla para pintar cualquier masa que hagamos).
  • Precalentamos el horno a 165ºC.
  • En un bol, tamizamos la harina, la maicena, los 65 gr. de azúcar, la levadura química y la sal.
  • En un bol grande, batimos el aceite, las yemas de huevo, el zumo y la ralladura de naranja y la vainilla hasta que todo esté mezclado. (No batir demasiado).
  • Montar las claras a punto de nieve. Cuando estén con los picos suaves, continuamos batiendo y añadimos el azúcar restante en forma de lluvia. Batir hasta que se formen picos fuertes.
  • Echamos un cuarto de las claras montadas en la masa de yemas y mezclamos con movimientos envolventes con ayuda de una espátula. Mezclamos lo justo para que no queden rastros de clara. Volver a echar otro cuarto y repetir lo mismo. Hacer la misma operación con el resto.
  • Divide la masa en dos moldes desmontables de 15 cm de diámetro, sin engrasar. 
  • Hornear durante unos 30-40 minutos hasta que esté dorado y si pinchamos con un palillo, éste salga con unas cuantas migas.
  • Sacar los moldes del horno y darles la vuelta inmediatamente para que se enfríen bocabajo sobre una rejilla. 
  • Desmoldamos, pasando un cuchillo por los laterales y desmontamos el molde. Volvemos a pasar el cuchillo por la base para separarlo por completo, si hace falta.
Del almíbar:
  • Ponemos en un cazo el azúcar y el agua y dejamos que hierva durante 5 minutos. Quitamos del fuego.
  • Echamos la vainilla y dejamos que se enfríe. Reservamos.

Del relleno:
  • En un bol, batimos la mantequilla y el azúcar las hasta que tengamos una crema blanquecina y esponjosa. 
  • Añadimos el dulce de leche, a temperatura ambiente y mezclamos hasta que volvamos a tener la misma textura suave y cremosa.
  • Echamos ahora el queso y batimos sólo un poco hasta que esté incorporado. No pasarse o se nos quedará muy líquida.
  • Meter en una manga pastelera con boquilla fina y reservar.

Del ganache:
  • Ponemos la nata, la leche y el sirope en un cazo y lo llevamos a ebullición.
  • Cuando rompa a hervir, lo quitamos del fuego y lo echamos sobre el chocolate que habremos partido y puesto en un bol de cristal.
  • Dejamos 5 minutos que atempere y removemos con una espátula suavemente, hasta que esté todo bien mezclado y tengamos una crema muy suave.
  • Añadimos la mantequilla en trocitos y seguimos removiendo con la espátula hasta que se haya disuelto por completo. Reservamos.

De la cobertura con forma de tronco:
  • Derretir el chocolate al baño maría. 
  • Extenderlo sobre un papel de horno con una espátula hasta que nos quede bien fino (unos 2mm).
  • Colocamos otro papel de horno encima y enrollamos haciendo un rollito fino.
  • Metemos en el congelador mientras montamos el resto de la tarta.
Montaje:
  • Divide cada bizcocho en dos, horizontalmente. Pon la primera capa en el plato o soporte donde la vayas a servir.
  • Pincela con un poco de almíbar.
  • Rellena con la crema de dulce de leche.
  • Pon la siguiente capa encima y vuelve a repetir la operación hasta que pongas la última capa.
  • Cubre toda la tarta con el resto de la crema de dulce de leche y ayúdate de un alisador o una espátula para dejar todo las paredes bien lisas.
  • Reparte una buena parte del ganache por encima de la tarta y deja caer por los lados también, extendiéndolo con una espátula.
  • En la parte de arriba, usaremos una raqueta con picos y haremos un círculo, para darle forma de los anillos de los troncos de los árboles. 
  • Con un cuchillo grande y que corte bien, haremos algunas muescas desde el borde hacia entro para que parezca el tronco agrietado por arriba.
  • Para hacer la corteza, sacamos del congelador el chocolate envuelto y lo desenvolvemos. Se nos partirá en trozos y es lo que queremos.
  • Iremos colocando los trozos, pegándolos con más ganache, hasta que los tengamos todos colocados, unos junto a otros. Dejaremos algunos para que parezca que la corteza se ha caído al suelo.
  • Para darle más realismo, pasaremos un pincel con ganache por todas las piezas de chocolate que forman la corteza. 
  • Colocamos la figurita de fondant en forma de hada y ¡voilá! Una tarta sin cubierta de fondant más que deliciosa.

     Por supuesto, esta tarta en forma de tronco da para mucho juego. No sólo podéis colocar encima un hada sino que podéis poner todos los animales del bosque, hacer setas preciosas y pegarlas al tronco,... vamos, con un poco de imaginación e inspiración, os quedará magnífica.

ORANGE AND DULCE DE LECHE CAKE

Ingredients:

For the cake:
5 medium eggs at room temperature
3/4 cups flour
1 1/2 teaspoon cornstarch
1/2 cup + 1/4 cup granulated sugar
1 1/2 teaspoon baking powder
A pinch of salt
4 Tablespoon sunflower or canola oil
4 Tablespoon freshly squeezed orange juice
1 Tablespoon grated orange peel
1 teaspoon vanilla paste

For the syrup:
175 ml. water
80 gr. granulated sugar
1/2 teaspoon vanilla paste

For the filling:
200 gr. unsalted butter at room temperature
150 gr. icing sugar
3 Tablespoon dulce de leche
150 gr. cream cheese

For the ganache:
175 gr. dark chocolate
125 ml. whipping cream
30 ml. whole milk
1 1/2 Tablespoon light corn syrup
75 gr. unsalted butter at room temperature

For the chocolate coating:
180 gr. milk chocolate

Directions:


For the cake:
  • Separate he egg whites and yolks in different bowls. We will use 4 egg whites and 3 egg yolks. It rests one egg yolk that you can use for brushing some other dough or so).
  • Preheat the oven to 325ºF.
  • In a bowl, sift the flour, the cornstarch, 1/2 cup sugar, the baking powder and the salt.
  • In a big bowl, whisk the oil, the egg yolks, orange juice and peel, and vanilla paste, until the batter holds together. (Do not overmix).
  • Beat the egg whites until they hold soft peaks. Add the remaining sugar in a raining way, while beating. Continue beating the mixture to stiff peaks.
  • Add 1/4 of the egg whites into the batter and mix with evolving movement, using a spatula. Add another fourth and repeat the process. Do the same with the rest of the egg whites.
  • Divide the batter into two unbuttered 15-cm springform molds.
  • Bake for 30-40 minutes until golden brown and a toothpick inserted in the center comes out with moist crumbs.
  • Take out the molds from the oven and immediately turn upside down onto a cooling rack until completely cool.
  • Take a knife and carefully, loosen the cake around the sides of each mold. Take out the basis of the mold and use the knife if necessary.
For the syrup:
  • In a saucepan, heat the sugar and the water until boiling. Boil for 5 minutes. Take out of the fire.
  • Add the vanilla paste, stir and let cool. Set aside.
For the filling:
  • In a big bowl, beat the butter and the icing sugar until fluffy.
  • Add the dulce de leche and beat until it gets the same texture it had before.
  • Add the crema cheese and mix until incorporated. Do not overtax or it will get very liquid.
For the ganache:
  • Place the whipping cream, the milk and the syrup in a saucepan and bring to boil.
  • As soon as it boils, take out of the heat and pour onto the chocolate, chopped and placed into a crystal bowl. Stir with a spatula until smooth.
  • Add the butter (in dice) and stir until it's homogeneous. Set aside.
For the chocolate coating:
  • Melt the chocolate in a double boiler.
  • Spread it in a parchment paper sheet with the help of a spatula.
  • Cover with another parchment paper sheet.
  • Roll up the parchment paper sheet and freeze until the cake is assembled.
Assembling:
  • Slice each layer in half horizontally. You will have four layers.
  • Place the first layer on a plate or board and brush with some syrup. 
  • Spread some dulce de leche cream over the layer. Repeat until you've covered three layers. 
  • Place the last layer on top and cover the entire cake with the rest of the dulce de leche cream. Use a smoother or palette knife to get the sides perfectly smooth.
  • Spread enough amount of ganache on top of the cake and spread some of them on the sides.
  • On top, use a decorating comb to make a circle and resemble the rings of a tree.
  • Make some cuts in the edges to resemble some cracks in the bark of a tree, using a big knife.
  • Take the chocolate out of the freezer and unroll it. It will break but it is what we want.
  • Stick the pieces of chocolate "bark" on the cake with some more ganache. Leave some of them on the basis as if they were on the ground.
  • With a brush and some more ganache, brush the chocolate "bark".
  • Place the fondant figurine on top and voila! A delicious non-fondant cake.
  • Enjoy!
